TIP For the professional touch, frost the cupcakes with a pastry bag and tip. For Chocolate-Cherry Cupcakes, I use a fluted tip such as Ateco #828 (see Sources); for Banana–Chocolate Chip Cupcakes, I use a round tip such as Ateco #806; the Strawberry-Pecan Cupcakes are frosted with the same round tip, and the frosting is flattened with a small offset spatula.

My son Peter loves my Banana-Chocolate Kugelhopf, so when it was time to come up with a cupcake for his third birthday party, SoNo Baking Company pastry chef Val Denner devised these sensational cupcakes. The chocolate chips in the cake echo the rich, dark chocolate ganache filling, and the creamy hazelnut frosting complements both bananas and chocolate. Peter was delighted and had a generously frosted face to prove it.
